Growing up, I always heard Syrians proudly talk about their kitchen – one of the richest in the world, yet not as widely known as it deserves to be. For a long time, its flavors were a well-kept secret, something you could only experience if you visited Syria or stepped into a Syrian home.

Then the war changed everything. Syrians carried their kitchen with them as they moved across the world. Some flavors traveled far, while others became rare, with ingredients that were once easy to find now out of reach.

For many of us, Syrian food became more than just food – it became nostalgia. Every smell, every taste takes us back to life before the war, to childhood memories and the feeling of home. Cooking turned into a way to hold on to our identity, our history, and our stories.
